All You Need:
- Mild Peppers (Shishito). Make sure they are straight
- Buttermilk
- Salt
- Lemon
The Recipe:
- Make buttermilk (not very thick not very thin medium consistency). Add salt and 1 lemon.
- Mix thoroughly.
- Slit the mirchis along the length and soak them in the buttermilk mixture for 8 hrs or overnight
- Dry them in the sun (needs good sun). DO NOT discard the buttermilk mixture
- In the evening, take the mirchis out and soak again in the same buttermilk mixture
- Dry again in the sun the next day
- Repeat till they completely dry and make a nice sound when you mix them
