Karam Muruku

All You Need:
  • Rice Flour 4 cups
  • Salt
  • Hing OR Ginger-garlic paste
  • Ajwain seeds powder 
  • Jeera Powder
  • Red Chilli Powder
  • Turmeric to get a nice color
  • Water boiling
  • Small bowl of hot oil for dough
  • Oil for deep fry
 
The Recipe:
  • Mix all the dry ingredients
  • Add boiling water and mix well
  • Then add hot oil and mix well. Mixture will be crumbly at this point. Keep aside covering with a lid
  • Take 2-3 scoops of mixture at a time in a separate bowl and mix with wet hands. Knead well until you get a soft smooth dough. Add this in muruku press and make the murukus in hot oil
  • You may have to keep adjusting the flame throughout... also try and give a few minutes gap between batches for the oil to pickup strength

Tips:

1. Make sure the rice flour you use is not gluten free. I used the brand 'Aksar' from local Indian stores.
