Mango Pulihara

The Recipe:
  • Cook 2 cups of raw rice adding a few drops of oil and turmeric. The oil helps the rice grains cook separately.
  • Grate green raw mango (1 cup of grate).Make sure the Mango is sour enough. Add enough salt needed for the rice in the mango grate and keep aside.
  • Transfer the rice in a large dish for easy mixing and add the grate to it. NEVER cook the mango grate.
  • Now in a pan,add a tbsp of oil and add 2 tsp mustard seeds, 1 tbsp Chana Dal, 1 tbsp Urad dal,few curry leaves,4 slitted Green chillies,2tsp Hing,2 tsp methi powder and switch off the stove and add this to the rice.Make sure u don't brown the tadka.
  • Separately fry Kaju and groundnuts and add to the rice. Mix all until the taste is uniform throughout the rice.If u feel,the rice needs to be more sour,squeeze in a few lemon drops. This is a classic recipe passed on to me by my mom and it never fails in taste.......its a lip-smacking Pulihora indeed :-)
