The Recipe:
- First make the stuffing powder.I usually have this powder stored in my freezer always.In a tbsp of oil,roast 1/3 cup Chana dal+1/3 cup Urad dal+2 tbsp jeera+few curry leaves.
- At the end ,add 1/4 cup Coriander seeds +2 tbsp Sesame seeds+2 tsp Hing+ few Red chillies.
- Cool it completely and grind it to a fine powder.
- Now slit the Brinjals into 4 pieces leaving it intact at the crown.Rub salt on the inside of the Brinjals and shallow fry them closing the lid.
- After the Brinjals get soft and cooked,remove one by one out of the oil and stuff the powder we made and transfer it to the serving bowl. Tastes excellent with Steamed rice and a dollop of ghee :-)
