All You Need:
- 100g Paneer
- 100g Tofu optional
- 1/2 Red bell pepper cut into 1 inch square
- 1/2 Green bell Pepper cut into 1 inch square
- 1/2 Red onion cut into 1 inch square
- 1/2 Cucumber cut into 1/2 inch width
- 1 Zuccini cut into 1/2 inch round
- 1 Red beetroot cut into thick slice
- 1 Sweet potato cut into 1/2 inch round
- 2 tbsp Roasted gram flour
- 4 tbsp Hung curd( thick curd)
- 1 tsp Ginger and Garlic paste
- 1/2 lemon juice
- 1 tsp Mint and coriander chutney or dry mint
- 1/2 tsp Turmeric powder
- 2 tsp Chaat masala powder
- 1 tsp Kasoori Methi
- 1 tsp Kashmiri red chili powder or paprika
- 2 tsp Tikka masala available in indian grocery store
- 2 tbsp Oil
- 1 tsp Salt or to taste
- Cut all vegetables, Paneer and Tofu. Keep it aside.
- In a big mixing bowel, add all spices listed in marination ingredients list and mix it very well. If you plan to add Tofu, take a part of the mixture aside for marinating Tofu separately. Add all vegetables and Paneer mix gently very well. Cover it and keep it aside for 2 hr in a fridge.
- Marinate the tofu separately. Cover it and keep it in a fridge.
- Soak wooden skewer in to water so that it would not burn while grilling.
- Preheat the oven at 400 degree. Cover the baking tray with aluminium foil and grease some oil on top.
- Arrange all marinated vegetables , Paneer and tofu in a wooden skewer.
- Bake it until all the side gets golden color. Switch off the oven and take out the grilled vegetables.
