Vegetable Noodles

All You Need:
  • Hakka Noodles (I use Ching's brand)
  • Onions, thinly sliced
  • Veggies - Carrots,cabbage,bell peppers,baby corns
  • Soya sauce 1 tbsp
  • Green chilli sauce
  • Chilli Garlic sauce (Optional)
  • Ajinomoto
  • Pepper powder
The Recipe:
  • Boil water, add salt and once bubbles appear, add noodles. reduce flame to medium and cook for 5 mts. Make sure they don't overcook.Drain extra water and wash noodles in cold water
  • Smear oil on your hands and run through noodles
  • Heat 3 tbsp of oil and saute onions
  • Add ginger-garlic paste and then veggies. Saute for 2-3 mts with the flame high. This step is important. Let the veggies be crisp
  • Add soya sauce,green chilli sauce,ajinomoto
  • Add noodles and sprinkle pepper powder and check salt
  • Garnish with spring onions and serve hot
