All You Need:
- Hakka Noodles (I use Ching's brand)
- Onions, thinly sliced
- Veggies - Carrots,cabbage,bell peppers,baby corns
- Soya sauce 1 tbsp
- Green chilli sauce
- Chilli Garlic sauce (Optional)
- Ajinomoto
- Pepper powder
- Boil water, add salt and once bubbles appear, add noodles. reduce flame to medium and cook for 5 mts. Make sure they don't overcook.Drain extra water and wash noodles in cold water
- Smear oil on your hands and run through noodles
- Heat 3 tbsp of oil and saute onions
- Add ginger-garlic paste and then veggies. Saute for 2-3 mts with the flame high. This step is important. Let the veggies be crisp
- Add soya sauce,green chilli sauce,ajinomoto
- Add noodles and sprinkle pepper powder and check salt
- Garnish with spring onions and serve hot
