Vankay Pachi Pulusu

The Recipe:
  • Grease brinjal and roast over low heat. Keep rotating it
  • Remove from flame, sprinkle water and leave aside for 10 mts. Peel the skin and mash the pulp
  • Place this mashed pulp in a large bowl and add chopped onions,green chillies,tamarind juice,1 tbsp jaggery,salt. Combine to form a thick paste
  • Add water to get your desired consistency
  • Add tadka -> mustard seeds,jeera,urad dal,red chillies,methi powder,hing,curry leaves
