All You Need:
- Rice Flour 1 cup
- Sooji 1 cup
- Maida or wheat flour 1/2 cup
- 1.5 tbsp yoghurt
- 2.5 cups water (+1/4 cup if not watery enough)
- Chopped green chillies, cilantro
- Chopped ginger
- Curry leaves
- Hing
- Jeera
- Kaju (Optional)
- Finely Chopped onions (Optional)
- Whole or crushed Black pepper (Optional)
The Recipe:
- Mix everything and let rest for 30 mins. The batter is thick after this. Add more water and make it watery.
- In both the above cases, the batter should be thin and watery.
- Heat a non stick tawa/iron griddle, take a little batter in a ladle and start filling it from the outer corners of the tawa to the inside in a net like pattern from a height of 6-8 inches. This height creates the lace like look.
- Drizzle a tsp of oil around the dosa.
- Tip - Make sure pan is medium hot. Never pour in the same place twice. Drop small amounts all over the pan.
