PATOLI MOM's RECIPE
All You Need:
- Chana dal 1/2 cup
- Moong dal 1/4 cup
- Ginger (v little)
- Salt
- Jeera
- Curry leaves
- Red Chillies
- Potatoes cut in big cubes
- Soak Chana dal and moong dal for 3 hrs. Make sure to drain all the water.
- Grind with red chillies,Jeera, ginger and salt. Do not grind to a fine paste. Make sure some chana dal is still visible
- Heat oil and add avalu,curry leaves, potatoes and salt
- After potato is half fried, add mixture on a very low flame
- Keep cooking mixing in between. Switch off flame when the mixture no longer sticks to your hands
- Important note: DO NOT USE TOO MUCH OIL. Otherwise the mixture gets crispy and you will not get the correct texture
PATOLI SWETHA's RECIPE
All You Need:
- Chana dal 1/2 cup + 2 spoons
- Toor dal 1/2 cup
- Red Chillies
- Jeera
- Salt
- Hing
- Curry leaves
- Vegetable of your choice (boil it with salt and turmeric)
- Soak Chana dal and toor dal for 2-3 hrs
- Grind with red chillies, Jeera, hing, salt
- Steam the mixture for 10-12 minutes in Idli steamer. Make sure a fork comes out clean when inserted
- Let it cool completely
- Pulse grind the mixture
- Heat oil and add avalu, hing, curry leaves
- Add the mixture. Close the lid and let it roast.
- Do not mix a lot of times as you want the mixture to roast
- In the end add the boiled vegetable of your choice. Make sure to add salt and turmeric when boiling the vegetable
