Masala Capsicum Rice

All You Need:
  • Cooked Rice Basmathi 3 cups (each grain should be separate)
  • Thinly sliced capsicum
  • Ghee
  • Powder - Jeera,Urad dal,V lil Chana dal,Dhaniya,Cloves,Curry leaves,Red Chillies, roasted peanuts
  • Grated Coconut
  • Roasted peanuts
 

The Recipe:
  • Heat ghee on medium heat and add the powder ingredients. Once cool,grind to a fine powder
  • In a kadai heat some oil and ghee and add Mustard seeds and Curry leaves followed by thinly sliced capsicum and fry for around 3 mts
  • Make sure the capsicum doesnt overcook and retains crispness
  • Add salt and combine well
  • Reduce heat and add cooked rice and combine with spice mixture
  • Add grated coconut,roasted peanuts and masala powder and mix very well
