Dahi Vada

The Recipe:
  • Soak 1 cup Urad Dal for atleast 6 hours or overnight. 1 cup yields 10 vadas.
  • Grind the batter and add Ginger-Greenchilli paste to it.
  • Also add salt and Karepaku.
  • Before making vadas, prepare the curd mix as follows : Beat curd and add salt,very little ginger- GChilli paste,slight sugar.
  • Make vadas and after they fry add them in lukewarm water and switch sides after few seconds.Gently squeeze vadas to remove water and make holes using a fork randomly and drop them in the curd mix.You need not add them in water if your vadas are already fluffy.
  • The more the soaking time, the better.
Note: 1 cup Urad Dal yields 10 medium sized vadas
