Boondi Laddu

All You Need:
For the boondi batter :
  • Gram Flour: 3 cups
  • Sugar: 3 cups Sugar 
  • Baking Soda : a pinch
  • Elachi
  • Yellow Food Color
  • Karpuram(optional)
  • Kaju
  • Almond pieces
4 rice cups yields 50 medium laddoos
The Recipe:
  • Make the syrup first - In a vessel, add the sugar and very little water (just enough to cover the sugar). Mix well and keep stirring till you get a string consistency. You will see lot of bubbles which slowly stop. This is another indication our syrup is ready.
  • Add Elachi powder+Karpuram+yellow Food Color
  • While the syrup is boiling, mix together gram flour and little water to get a thick yet flowing consistency.
  • Add a pinch of baking soda
  • Make boondis till the boondis give out a slight sound when tapped indicating they are done. Do not overfry or underfry.
  • Pulse grind a small batch of boondi
  • In a spoon of ghee, add the Kaju and Almond pieces.
  • Mix boondi and nuts in the syrup
  • Cool off a little and start making laddus.
  • VERY IMP TIP - fry only a small ladle of batter at a time while making boondi. Use a big kadai for oil
