All You Need:
For the boondi batter :
- Gram Flour: 3 cups
- Sugar: 3 cups Sugar
- Baking Soda : a pinch
- Elachi
- Yellow Food Color
- Karpuram(optional)
- Kaju
- Almond pieces
The Recipe:
- Make the syrup first - In a vessel, add the sugar and very little water (just enough to cover the sugar). Mix well and keep stirring till you get a string consistency. You will see lot of bubbles which slowly stop. This is another indication our syrup is ready.
- Add Elachi powder+Karpuram+yellow Food Color
- While the syrup is boiling, mix together gram flour and little water to get a thick yet flowing consistency.
- Add a pinch of baking soda
- Make boondis till the boondis give out a slight sound when tapped indicating they are done. Do not overfry or underfry.
- Pulse grind a small batch of boondi
- In a spoon of ghee, add the Kaju and Almond pieces.
- Mix boondi and nuts in the syrup
- Cool off a little and start making laddus.
- VERY IMP TIP - fry only a small ladle of batter at a time while making boondi. Use a big kadai for oil
