NanKhatai (Cookies)

All You Need:
  • 1 cup All purpose flour
  • 3/4 cup Besan (gram flour)
  • 3/4 cup Powdered sugar
  • 1/2 cup Ghee (clarified butter)
  • 2 tbsp Fine Sooji
  • 1/2 tsp Baking Powder
  • Pinch of Salt
  • 1/2 tsp Green cardamom Powder (crushed seeds)
  • 2 tbsp Milk (If required)
  • Crushed dry fruits of your choice for garnish

The Recipe:
  • Sift the flour, besan and baking soda and keep aside. (This step is important)
  • Using the electric mixer, whip the sugar and ghee on a low speed for a few mins till the mixture turns creamy and whitish (4 mins approximately).
  • Add the dry ingredients and mix well. If the flour is dry, add 2 tbsp milk and mix.
  • Then refrigerate for 10-15 mins.
  • Pre-heat the oven 300F.
  • Make small balls (Pedas) and place it on a cookie sheet leaving space in between.  Add crushed dry fruits or raisins and press it lightly.
  • Bake it for 10-15 mins until golden. Good check is to examine the bottom of the cookie and see if it turns brown (make sure it doesn't overbrown). The cookies bake a little more after taking it out of the oven. 
  • Take out of oven and let them cool for a few minutes. They are initially soft but turn crunchy after a bit.
  • Put them in an air tight container and enjoy with your tea or coffee.
