Alu Paratha

All You Need:
  • 3-4 potatoes baked or boiled (I used baked)
  • 1-2 green chilies chopped
  • 1/2 chopped red onion
  • chopped cilantro
  • salt to taste
  • 1/2 tsp red chilli powder or to taste
  • 1/2 tsp garam masala or to taste
  • 1/2 tsp amchoor
  • whole wheat dough
The Recipe:
  • Wash and boil the potatoes.  Drain the water and let it cool down. Peel the potatoes and mash them using a fork, hand or a potato masher. 
  • In a mixing bowl add chopped onion, cilantro, green chilli. Add the boiled potatoes, and all the spices which is salt, amchoor, garam masala, red chili powder.  Mix everything together using your hand and the mixture is ready.
  • Also place the tawa on the gas on a low heat so that it is hot enough to make the parathas.
  • Now make balls of the whole wheat dough.  Roll it into a small circle, stuff it with the aloo mixture bringing all the ends together and make a ball again.  Dust the surface with the whole wheat flour and roll it out to a desired size.
  • Place the paratha on the hot tawa,turning occasionally.  Then add olive oil to shallow fry the paratha until cooked.
  • Serve hot with a dollop of butter, yogurt and pickle along with a hot cup of tea.
