All You Need:
- Sooji 1 cup
- Sugar 1 cup
- Water 2 to 2.5 cups
- Ghee 1 tbsp
- Cardamom powder 1tsp
- Sliced Almonds (Optional)
- Ghee roasted Cashews and raisins (Optional)
- Food color (Optional)
- Roast the rava in a tsp of ghee until a nice aroma emanates
- Boil water+sugar+food color and when bubbles begin to appear, slowly add the rava making sure no lumps are formed
- Add ghee and Almonds/Kaju/Raisins and mix well. Switch off stove
- Transfer the kesari on a plate immediately and spread evenly
- Cut into cakes and serve
