Bhindi Masala

Variation 1 (Best for Rice)
All You Need:
  •  Bhindi, cut
  • Onions
  • Ginger
  • Green chillies
  • Mint leaves
  • Tomatoes 2 big
  • Sesame seeds roasted 2 tbsp
  • Lime juice 1 tbsp
  • Tamarind paste
  • Ground nuts 2 tbsp
  • Jaggery 1 tbsp
  • Tadka -> Mustard seeds,jeera,cloves,cinnamon,bayleaves
The Recipe:
  • Deep fry bhindi and keep aside
  • Grind Onions+green chillies+ginger+mint into a fine paste
  • Blanch tomatoes and keep aside
  • Grind roasted sesame seeds with lime juice,tamarind paste,groundnuts,jaggery
  • Heat oil and add onion paste. Cook for sometime
  • Add tomato puree,haldi,jeera powder,dhaniya powder,garam masala powder,red chilli powder,elachi and salt
  • Cook till oil separates
  • Add sesame seeds paste and a cup of water wth salt. let it boil till it is blended well
  • Add okra pieces
  • Add tadka
Variation 2 (Best for Rotis)
  • Cut each Bhindi into2 or 3 pieces
  • Add Besan, Red Chilli Powder, oil. Mix well
  • Shallow or deep fry them and keep aside
  • In oil, add Green chillies, Garlic, Onions, Cumin seeds, Dhaniya powder, Red chilli powder, Cilantro, salt, tomato puree, 1 tsp sugar and little water. Let it cook for a min.
  • Now add Bhindi. Cover and let it cook for 5-6 mins
  • Serve with hot Rotis
