Vankay Curry - several variations

Recipe 1:
  • Grind ginger+green chillies+salt+some water to grind
  • Heat a tbsp of oil and add seasoning -> Mustard seeds,Chana dal,Urad dal,Jeera,fenugreek seeds powder
  • Then add brinjal pieces.
  • After they cook for a while, add the paste,haldi,cilantro,methi leaves
  • Place lid and cook
Recipe 2:
  • Grind ginger+greenchillies+cilantro+some salt
  • Stuff in brinjals and fry them sprinkling salt water on it
Recipe 3:
  • Dry roast Urad dal and Red chillies.
  • Grind them along with Jeera and onion
  • Fry brinjals and when they are half cooked, add the above mixture
Recipe 4 (pulusu petti koora):
  • Prepare thick tamarind juice
  • Heat a tbsp of oil ad add mustard seeds,fenugreek powder,red chillies, curry leaves,hing
  • Add the brinjal pieces. Sprinkle some salt water and turmeric. Close lid
  • After it cooks well, add tamarind juice with 1 tsp of sugar and red chilli powder
  • Cook for a while and switch off the stove
Recipe 5 (Vankaya Ullikaram)
  • Fry brinjal pieces in oil adding salt
  • Grind oinion,red chilli powder,salt,haldi,jeera
  • After the brinjals cook, add the paste. Cook further and switch off the stove
Recipe 6:
  • Grind Dhaniya + Red chillies+Urad dal+Chana Dal+Palli
  • Then grind some coconut with the above followed by ginger,garlic and onions
  • In a pan fry brinjals with onion and then add the paste and cook
