Chakli (Round disc shape Muruku)


Recipe 1 (Aunty's recipe. The portions below make 45 chaklis)

All You Need:
  • Raw Rice(doddu biyyam or idli rice) : 3 cups
  • Split Urad dal : 3/4 cup
  • Sesame Seeds : 1 tsp
  • Crushed Jeera : 2 tsp
  • Hing
  • Salt
The Recipe:
  • Soak rice for 6 hrs. Then spread rice on a cloth and let it air dry
  • Meanwhile, roast the urad dal till a nice aroma comes out. Dal should not get brown. Keep aside and let it cool. Once cooled, grind it and sieve it in a fine sieve so that you get a fine powder. Keep this aside
  • Once rice cools down, grind it and sieve it. You can grind multiple times to get the fine powder.
  • Roast the rice flour in a pan. Keep mixing and let it not brown.
  • Then sieve the rice flour again so that any balls will get left out.
  • Now mix both rice flour and urad flours. You can make this and freeze it for months.
  • Whenever you are ready to make chaklis, take the flour and add sesame seeds, crushed jeera, hing and salt. Also add hot oil and mix well 
  • Make a soft dough by adding the cold water little by little. Knead the dough till very soft. The dough should be soft and smooth.
  • Take a small portion of dough and fill in the muruku/ chakli press with one star hole.
  • Grease a ladle or a small plate with little oil. Press the chakli maker on the greased ladle or plate. Slightly rotate the chakli maker round and round until it forms a spiral shaped chakli.
  • Heat oil for deep frying. Carefully drop the chaklis and deep fry them on a medium flame.
  • Remove and place them on a tissue paper. Let them cool completely and store in airtight container. 
Recipe 2

All You Need:
  • Rice Flour : 3 cups
  • Roasted Bengal Gram Powder : 1 cup
  • Ajwain Seeds : 1 tsp
  • Red Chilli Powder : 2 tsp
  • Salt
The Recipe:
  • Combine the both flours with salt, red chilli powder and ajwain seeds and set aside.
  • Bring 2 cups of water to a rolling boil with 2 tablespoons of oil. Add this boiling water to the flour and mix with a spatula. Mix very well and cool.
  • Make a soft dough by adding the cold water little by little. Knead the dough till very soft. The dough should be soft and smooth.
  • Take a small portion of dough and fill in the muruku/chakli press.
