Banana Walnut Bread

All You Need:
  • 1 1/4 cups All purpose flour
  • 1 cup white sugar
  • 1/2 cup unsalted butter (at room temperature)
  • 2 eggs beaten
  • 1 teaspoon baking soda 
  • 1 cup mashed ripe banana (mash with a fork,approx 3 bananas)  
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 tsp salt
The Recipe:
  • Preheat oven to 350 degrees.
  • Grease and flour a 9x9 inch pan.
  • Sift the baking soda, flour and salt in a medium bowl. Keep aside. 
  • In a large bowl, cream butter and sugar until light using an electric mixer.
  • Add eggs and Vanilla and beat well.
  • Add the mashed bananas and vanilla stir to combine.
  • With a rubber spatula, mix in the flour until just incorporated. Do not over mix.
  • Fold in the walnuts
  • Pour batter into a 9x9 inch pan and bake at 350 degrees for 55-60 minutes or until done.
