Fall Special : Almond Peach Muffins


Story

"Delicious Autumn! My very soul is wedded to it, and if I were a bird I would fly about the earth seeking successive autumns."
said a very famous writer .......to which I agree with my heart and soul. After all, who doesn't like Fall.....? Now I don't want to get poetic here dears.......Since long I wanted to share one heart-warming story with u all.....This story is Baby Sirisha's favorite.....:-)) My mom used to feed us in the mouth until we both sisters grew pretty old.....In the early formative years,she used to recite a lot of tales...This one I love the best......

Once upon a time all the Organs of the body - Hands, Legs, Eyes,Nose, Ears et others were quarelling about who is the best.
Hand said ' No one can do any work without me....So undoubtedly I am the best" .
Leg said "You cannot move from place to place without me...I carry all of u.hence I am the best"
Ear
said "Can u even listen to what people say to you without me...? What can u do if u cannot hear at all...? I am so important than all of you "
Eyes said "Now...Now.....how can you see anyone without me....How can u appreciate beauty around you.....? I am the Best...No doubt"
In this way every organ began quarelling except our very dear Stomach.It sat quite all along......And it was the wisest of all. In order to teach all the organs a lesson, it went on strike...Stopped functioning. Slowly,the organs grew weaker and weaker as they all did not get any food. " why...? " I used to ask this to my mom and she used to say "Because Stomach carries whatever food you eat and supplies to various organs and they all get their strength."
Slowly every organ realized the importance of Stomach and finally they all came to him and said " Stomach we were foolishly quarelling amongst ourselves......Indeed you are the Best. We all are nothing before you.Please start working again...or else we are going to die." Glad that the organs realized their foolishness,Stomach said "Friends...We all are equal........We all complement each other.Together we are a strength. Let us all respect each other from now on and behave well.Our unity is our strength""Hail" ....... All the organs at once cheered and they remained happy ever after.............
Lesson to be learned is.....You should never ignore your stomach.Eat timely and be fit.Eat well and Live well........

Now dears......The above story may sound frivolous but we as kids used to listen to this one with our eyes wide open and gobble up whatever our mom would feed us :-)))) It will still remain close to my heart dears...How can I ever forget those pristine moments.....?

Now coming to this recipe,I made these delicious Almond Peach Muffins exclusively for Mansi's AFAM event. Believe me, they tasted awesome........This is one of the tastiest Muffins I ever had.......I bet you will love it too..........The muffins were so soft,moist and every bite, loaded with the freshness of the peach, was delicious.

 
All You Need : (makes 6-7 muffins)
  • 3/4 cup flour
  • 1/2 cup sugar
  • 3/8 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 eggs
  • 1/4 cup vegetable oil
  • 1/4 tsp vanilla
  • 1/2 tsp almond extract
  • 1 cup chopped peeled fresh peaches
    or
    1/2 (16 oz.) can peaches, drained and chopped
  • 1/4 cup almonds, chopped



The Recipe:
  • In a large bowl combine flour, sugar, salt and baking soda
  • In another bowl beat eggs, oil and extracts; stir in dry ingredients just until moistened
  • Fold in peaches and almonds
  • Fill greased or paper-lined muffin cups 3/4 full
  • Bake at 375 degrees F for 20-25 minutes . Insert a toothpick and it should come out clean.
