- 1 cup Valpapdi
- 1 1/2 cup freshly chopped Spinach
- 1 medium sized Potato cut into small,slender pieces
- 1 big Onion
- 1 tbsp Ginger-Garlic paste
- 1tbsp Chana dal
- 1 tbsp Urad dal
- 1 tbsp Mustard seeds
- 1 tsp jeera
- Few Curry leaves
- 5 green chillies chopped finely
- 1 tsp Turmeric
- 4 tbsp oil

Recipe Notes :
- Boil Valpapdi in salt water for 5-10 minutes .Drain water and keep the vegetable aside.
- Heat oil in a kadai and do the seasoning first with Chana dal,Urad dal,Mustard seeds,Jeera,Curry leaves,Green mirchi ,Ginger-garlic paste and Turmeric
- Saute for a minute and then add small slices of onions
- After 2 mts,add Valpapdi. Saute for approximately 4-5 mts and then add the Potato
- Add salt at this point and leave aside. Do not stir much( we do not want to crush the potato pieces). After a few minutes when both the potato and valpapdi get cooked (takes app 5-6 mts),add the Spinach.
- Mix for one more minute and turn off the stove
- I did not add any garam masala/any powder because the palak and valpapdi flavor are so over-powering and pleasing that I did not want to miss out on those.
- Serve hot with garma-garam Roti.

that sounds delicious. I simply saute the valpapdi with grated coconuts. this is new and nice. have you changed the look of your blog or am I visiting for the first time?

Yes,valpapdi with coconut is the age-old combination....my mom cooks it that way .I love it too :-)
