Story
Hi Dears........I was watching this movie 'Out of Time' starring Denzel...I am a great fan of his,especially in the roles where he plays a cop....I was so involved in the movie dears....It was gripping....If any of you are Denzel fans and missed this movie..Do watch it :-) And then I was thinking....its been a few months since we saw any desi pic.......Have u ever heard the term 'Bad Luck always' ....Thatz what happened with me when I desperately tried to watch the movie 'Happy Days' (a telugu one) which released at a local theatre here......I read a lot of reviews online....They said it was a college students -fun & romantic one....I was all the more tempted.....
The reasons I couldn't make it was -One day somebody came over,another day it was an unavoidable social call,and yet another day %^!W%!%* ,and yet another day ^*&(&&).........

Now.....a nice chatterbox that I am.....Let me come back to my track......I was not very much involved in the food events happening in the blogosphere.....I was watching all of them however,but I hardly participated.Honestly,I really really wished I could participate dears.....My schedules hardly give me room for a choice.......When Sunita announced the event Saffron....I thought....I have to make some dish this time........So,I ended up making Mava Kesar Roll....My very first attempt. It came out awesome dears and so I wish to share this with you all. The recipe source is Tarla dalal.....This dish needed grated Khoya which is hard to find in shops and so I used Viji's shortcut for making it...Believe me it yielded excellent results....Thanks Saviour Viji :-))All You Need :

- 2 cups Grated Khoya( To make this u need evaporated milk and 1 cup of full cream milk powder)
- 1/2 cup powdered sugar
- 4-5 Saffron Strands (dissolved in 1 tbsp warm milk)
- 1 tsp Elachi powder
- First step is to make Khoya - Take 1 cup milk powder in a bowl and slowly add evaporated milk to it until it forms a smooth sticky dough. Freeze for 30 mts and then grate.This grate is called Mava

- Combine the above Mava and powdered sugar in a heavy bottomed thick pan and cook on a slow flame stirring continuously till the sugar has dissolved and the moisture evaporated (10-12 mts)
- Remove from fire and divide the mixture into 2 equal parts
- Mix the elachi powder in one part to make the mava mixture and allow it to cool completely
- Add the Saffron to the other part to make the Kesar mixture. Mix well and allo it to cool completely
- Put the mava mixture between 2 plastic sheets and roll it to form a rectangle of 4"* 6" (i.e. Ur rolling pin is not directly on the mava mixture,but is on the top of the plastic sheet covering it)
- Roll out the Kesar in the same way
- Place the Mava rectangle on a thin food wrap.Place the Kesar rectabgle on top of the mava rectangle
- Carefully roll along with the food wrap taking care to see that no cracks are formed on the surface
- Cover tightly and refrigerate till firm (30-40 mts) and then remove the plastic sheet
- Cover completely with silver leaves(optional) and cut into slices
- U may garnish each with slivered Pistachios........Delicious Mava Kesar Rolls ready :-))

Everythingz changing now.....And Should we change too.....? I refuse........these customs like Diwali and other important festivals should be given their true credence...We learnt it from our elders and now Is it not our responsibility to teach and pass it on to our kith and kin..? If not a lot,let us spend sometime atleast to explain the importance of our festivals to our children..........So...Are we in dears...? :-))

All You Need :

- 1 tsp Elachi powder
- 1 tbsp slivered Pistachios for decoration

- Remove from firs and add elachi poder and mix well.Allow it to cool completely
- Divide the mixture into two portions : 2/3 and 1/3
- In the 1/3 mixture,add the pistachios and mix well
- In the 2/3 mixture,add the saffron strands and mix well
- Divide the Pistachios mixture into 6 equal portions and shape each one into rounds
- Divide the Saffron mixture into 6 equal portions and shape each one into rounds
- Stuff each Saffron round with the Pistachio round and seal the edges completely
- U can make any patterns on the peda using a toothpick
- Garnish with slivered Pistachios.......Delicious Pedas ready

Suganya & Cooker : Good question. Khova when used as it is tends to form lumps and once it cools down,the damage is already done...it forms hard blocks and the inside of the khova will not be done well as well as the shape. When u grate it,there is no question of lumps formation. Thanks dears....anyways let me tell u....its very very easy to grate...not very hard...This is probably one of the easiest things I ever grated :-)

Sirisha, I did not know you could make khova at home. So for 1 cup milk powder, how much milk do you add 1 tin or 1 cup?

Redchillies : U meant evaporated milk right...? Do not use plain milk for Khova.....For 1 cup of milk powder,I used approximately 1/4 cup of evaporated milk. You have to keep adding milk little by little and keep mixing the dough until u get a chapati-dough like consistency......U shud be able to roll it into a soft sticky ball as shown in my photograph...Good luck dear and let me know how they came out :-)

Is there a particular brand of full cream milk powder you can recommend? I went shopping for this but all I found was dry non-fat milk powder. Thanks in advance.
Kribha......i got Nestle full cream milk powder....I used that....It comes in a tin....Did u check out Indian grocery stores....Ask the shopkeeper....In another Indian store ,there was this plain packet which says 'Mava milk powder' (No brand actually).I tried that too and even that came out fine.

I'm sorry to bug you again and again. I've got some questions.
1.Can you tell me what measure of evaporated milk you used.
2.If I use mawa powder do i just add water alone. If so could you tell the measure for that also.

No worries dear....u are not bugging me...sorry for the late reply as I just got home from my MBA class....I go to my MBA classes from morning 8 until 8 in the night...Just got home and saw ur comment....
U shud NEVER use water to make the dough....even if it is mava powder.You should ONLY use Evaporated milk.
I didn't use any measure but I can tell u that 2 rice cups of the powder requires roughly around 4 tbsp of evaporated milk......What you have to do is....Gradually add evaporated milk tbsp by tbsp and mix continuously....U shud form a Chapati like dough....neither too hard nor too soft....U see the chapati-like ball in my pictures....?
Freeze it covering it properly so that it does not catch the smell of any neighboring items in ur freezer.After 30 mts...grate it.
Don't worry.....u are going to do it perfect...Hope this helped.....Incase of any doubts..get back to me...Okay..?

I did it at last. We really liked it , but a couple of things were not the same as yours.
The kesar filling did not get that bright orange color as yours. It was very pale. Guess I should have added more saffron.
After making the slices when I tasted it it was a little sticky to my palatte. I think I should have kept in the pan a little longer.
Otherwise, I was really satisfied with the end result and so was my hubby.Can't wait to distribute it to my friends and hear their comments.

Sreelu...sorry for the late reply.....cud check ur msg only now......If u get 'Khoya' in Indian stores,that would be the best alternative for milk powder. I get the milk powder from Indian grocery stores. U have Amul brand or unbranded mava milk powder. Both are good.Hope this answered. Sorry for the delay again.Sirisha

You get Nestle brand in some Indian stores in case u happen to stay in US. Full cream milk powder is also called Mava powder. You may ask the grocery store person that you need milk powder....the one used to make sweets. Hope this helped.Let me know If u need any more clarifications :-)

Hey Siri....unfortunately there is no substitute to the already substituted products :) Ideally Khova is made by boiling milk,curdling it with lemon juice and stirring continuously....but we don't really want to adopt such a laborious procedure right.....so evaporated milk and milk powder combo works like magic and khova would be ready in a jiffy.....If u go any place which has an Indian store,then buy some 2-3 packs and store it so that u may use it anytime.....evap milk can be bought from any American store.....Just ask the Indian store wala abt the milk powder...sometimes u may not trace it immediately in the store......Hope this helped :-))

Hi just came across ur receipe...it's so yummy. I am thinking of making it for a snack exchange party...So how many pieces will get approx in 1 cup of powder and eveporated milk...
