Crunchy Ribbon Muruku & Chilled Mango Kullllllllfi :-)

Ribbon Muruku

All You Need :
  • 1 cup Rice Flour
  • 1/4 th cup Besan
  • 3 tsps RedChilli powder
  • 2 tsps melted Butter (You have to heat the butter until u see some visible smokelines)
  • Salt to taste
Variation 1:
  • 1 Tbsp Ginger-Garlic paste
  • 2 tsp Jeera Powder
Variation 2:
  • 2 tsp Hing (Asafoetida)
  • 2 tsp Ajwain seeds Powder(crushed to a fine powder)

Recipe Notes :
  • Mix together the flours adding RedChilli powder and Salt
  • Choose any of the variations you like : either 1 or 2 and add the ingredients accordingly
  • Now add the heated butter and mix once again
  • Add enough water and make a pliable dough.Make sure the dough is neither too hard nor too soft
  • Smear some oil on the inside surfaces of the muruku press so that the batter drops in easily. Do this each time before you load a fresh lump of batter in it.
  • Now squeeze the batter in any random shape in hot oil.The batch should be ready in a short time,doesn't take much time to fry
  • Empty it on a paper towel. Continue this until the whole batter is finished
  • Let the muruku cool completely and then store in an air-tight container

Chilllllllled Mango Kulfi

All You Need :

  • One 14 oz Condensed milk tin
  • One 16 oz Evaporated milk tin
  • 3 slices of Milk Bread
  • 1 cup Mango Puree
  • 1 Quart Heavy whipping cream
  • Crushed nuts of your choice -Pistachios,Almonds,Walnuts



Recipe Notes :
  • Make the bread into a fine powder (preferably in a food processor/Blender)including the brown borders and keep aside
  • Chop nuts into fine pieces and keep aside (U can chop these in Blender-Press Chop button on it)
  • Blend Condensed milk,Evaporated milk,Whipping cream,Mango Puree until all are well blended
  • Add Bread pieces and nuts
  • Pour into moulds and freeze it for 6 hours atleast
  • Delicious Kulfi is ready.......If you want to serve it to any guests,take out the moulds 10 minutes in advance and keep them at room temperature.They are ready to be served in 10 mts.

I make chakli with a similar kind of dough.
I love those pretty bowls of kulfi. I will surly give it a try.
If I don't use mango, do I need to use the rest of the ingredients in same proportions?

Suma.....The proportions are same even if you don't use the mango.....To get the original Kulfi look...add a drop of green color (not more) looks classic....I didn't take the pictures of that kulfi or else I would have posted it :-)
